Ingredients:- 2/3 cup roughly chopped pecans
- 3 pounds sweet potatoes, peeled and cut into large diced pieces
- salt and pepper
- 2 Tbs. olive oil
- 4 Tbs. unsalted butter
- 3 Tbs. maple syrup
- 1 Tbs. fresh rosemary leaves
- ¼ tsp. cayenne pepper
