Ingredients
- 2 cups Couscous
- 2 cups boiling water
- pinch Kosher salt
- 6 Naval oranges (zested and juiced)
- 1 bunch scallions, chopped
- 1 tsp chopped fresh garlic
- 3-4 Gravenstein apples, diced small
- 1 cup toasted chopped pecans
- ½ cup toasted pumpkin seeds
- ½ cup dried cranberries
- 1 cup chopped dry apricots
- 4 T fresh chopped mint
- ½ cup extra virgin olive oil
- salt and pepper to taste
