RECIPE: Yukon Gold Potato Salad with Andouille Sausage

Grilled Yukon Gold Potato Salad with Andouille Sausage

  • 3 lbs Yukon Gold Potatoes
  • ¼ cup olive oil
  • 1 cup diced red onion
  • 1 cup diced celery
  • 3 T chopped fresh garlic
  • ½ cup fresh chopped parsley
  • ½ cup whole grain mustard
  • 1/3 cup aged red wine vinegar
  • 1 cup extra virgin olive oil
  • 1 T kosher salt
  • 2 tsp cracked black pepper
  • 1 lb Andouille Sausage

In a large pot, parboil potatoes just until tender. Remove from water and let cool. When grill is hot, cut potatoes down the center and brush with olive oil. Sprinkle with salt and pepper. Grill on both sides until potatoes are lightly browned.

Grill sausages until browned and crisp. Cut potatoes and dice sausage and place in a large bowl. Add onion, celery, garlic, parsley, mustard and toss well. Drizzle the vinegar and olive oil over potatoes. Add salt and pepper and check seasoning.

Serve immediately slightly warm. Serves 10
