Recipe: Chocolate Dipped Shortbread Cookie Hearts

Your beloved will melt over these shortbread cookies!

  • 1 cup sweet butter
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ½ tsp espresso coffee (cool)
  • 2 cups all purpose flour
  • ¼ cup best quality unsweetened cocoa powder
  • (Valhrona, Callebaut, Sharfenberger 85%)
  • Powdered sugar (for rolling)
  • 12 oz best quality chocolate 70%, chopped
  • 1-2 T heavy cream, slightly warm


Cream the butter and sugars until light and fluffy. Blend in espresso. Sift together flour and cocoa powder and mix into butter. Dough will be stiff. Let dough rest for 30 minutes before rolling and cutting.

Roll dough to 1/6 inch thickness on a powdered sugar dusted surface. Cut into desired shapes (hearts, etc). Place on parchment covered sheet pan and bake 12-15 minutes at 375 degrees. Remove from oven and let cool before dipping in chocolate.

Melt chocolate until smooth over simmering water. Add cream to desired consistency for dipping. Let the chocolate cool slightly for 10 minutes and then dip the shortbread corner, (dipping one third to one half of cookie). Place on clean parchment paper and let set before serving.
