Recipe: Luscious Chocolate Cake with Chocolate Whipped Cream Frosting
Wine Pairing: Monte Rosso Cabernet Sauvignon

3 eggs
1 tsp. vanilla extract
1 cup granulated sugar
1/2 cup premium semi-sweet chocolate, ground
1 cup flour
4 tsp. baking powder

Frosting Ingredients:
1 pint whipping cream
1/2 cup powdered sugar
1/4 cup premium semi-sweet chocolate, ground
1/2 cup slivered almonds

Preheat oven to 350 degrees and grease two cake pans. Separate 3 eggs into the whites and yolks. In a large bowl, combine the egg yolks with the vanilla and granulated sugar and beat well. In a measuring cup, add the ground chocolate and fill to 1-cup line with warm water. Mix well to dissolve the chocolate. Add the chocolate to the egg mixture and beat well.

Sift the flour and baking powder together and stir into mixture being careful not to over-mix. In a separate bowl, beat the egg whites with a whisk until they form soft peaks. Gently fold egg whites into chocolate mixture and pour gently into cake pans.

Bake at 350 degrees for 15 minutes or until a knife inserted comes out clean. Let cool for at least 20 minutes before frosting.

Once the cake is cool, you can make the frosting. Whip the whipping cream together with the powdered sugar and semi-sweet chocolate until it forms soft peaks. Place one of the cakes on a cake plate and frost the top using about 1/3 of the frosting. Gently place the other cake on top of the first then frost the top and sides with the remaining frosting.

Sprinkle slivered almonds on top and serve with the Louis M. Martini Monte Rosso Vineyard Cabernet Sauvignon.
