Wine & Food Pairing: Strawberry-Prosciutto Salad

RECIPE: Fresh Strawberry-Prosciutto Salad

  • 2 pints fresh strawberries, cut in slices
  • 2 medium roma tomatoes, cut into wedges
  • ¼ cup toasted pine nuts
  • 4 oz thinly sliced prosciutto
  • ¼ cup KORBEL Sparkling
  • 2 oranges, zested and juiced
  • ¼ cup extra virgin olive oil
  • 1 T chopped fresh mint
  • 3 cups young arugula

In a blender, combine the sparkling wine, zest, juice, 2 large strawberries, a pinch of salt and pepper. Blend until mixed then add the oil in to make the dressing.

Place the sliced strawberries, tomatoes, pinenuts, mint and arugula in a large bowl.  Gently toss with the dressing (lightly). Mound the salad in the middle of a large plate. Split the prosciutto between the plates by laying on top like ribbons. Spoon a small amount of dressing around the plate to garnish.
