Enjoy this delicious Chilled Avocado Soup with our lovely Korbel Chardonnay Champagne.
- 3 T extra virgin olive oil
- 1 cup diced yellow onion
- 1 large jalapeno, diced with seeds
- 1 T chopped fresh garlic
- salt and pepper to taste
- 4 firm ripe avocado, smashed
- 4 cups vegetable stock
- 1/4 cup fresh lemon juice
- 1/4 cup fresh cilantro, chopped
- 2 cups water
- 1/2 cup creme fraiche or sour cream
Heat the olive oil in a pan and saute the onion, garlic, jalapeno until soft and seasoned with salt and pepper. Let cool.
Place avocado, sautéed items, chicken broth, water, cilantro, and lemon juice in a bowl and then transfer in batches into a blender. Blend until smooth. Season the soup with salt and pepper and chill for 3 hours.
Serve drizzled with sour cream or creme fraiche and crostini.
