Ingredients:
- 1 # Yukon Gold Potatoes (peeled)
- ½ ea yellow onion (julienned)
- 1 cup Parmesan cheese (grated)
- 2 cups heavy cream
- Fresh herbs (chopped)
- Salt and pepper to taste
Directions:
Place cream into a medium sized bowl. Add salt and pepper and chopped herbs. Slice
potatoes thin into the medium bowl. Layer potatoes into a greased small casserole pan. Place onion and cheese between each layer. Season potatoes if needed. Continue layering
potatoes with onion and cheese until complete. Pour cream over potatoes.
Sprinkle top with remaining cheese. Bake in a 400 degree oven covered for 45
minutes or until tender. Remove foil and allow the top to brown.
