Ingredients:
Blueberry Compote
(Simmer all until slightly thickened. Serve over pancakes.)
- 1 cup whole milk
- 4 eggs, separated
- 1 1/2 cup flour
- 1/4 cup powdered sugar
- 1 1/2 tsp baking powder
- Pinch salt
- ¼ cup lemon zest puree
- 2 cups ricotta
- Combine dry ingredients in a bowl and whisk together.
- In a separate bowl, combine milk, ricotta, egg yolks, and lemon zest.
- Mix the wet ingredients into the dry and fold until just combined. Do not overmix.
- In another clean bowl, beat the egg whites until they hold stiff, shiny peaks. Gently fold them into ricotta-flour mixture.
- Let batter rest for 30 minutes at room temperature before cooking on a Silver Dollar Pancake Pan.

- 1/3 cu sugar
- 1 cinnamon stick
- Zest of one Meyer lemon
- 2 bags frozen blueberries

Awesome! We are foodies and have stayed in many B&B's and hotels...the breakfasts and service by far is better than some 5 star hotels I have stayed at in big cities.
The staff is friendly and the Inn is beautiful.
Sounds good, but how are the ingredients in the first part served? You indicate let rest for 30 min. It this mixture uncooked with the eggs in it? Do you bake it? I am puzzled.
Pancake batter is typically heated in a frying pan or griddle. Places like Cost Plus World Market or Williams-Sonoma have the silver dollar pancake pans.

Does one let the mix rest, no cooking, serve directly into bowls?
Confusing recipe. What is lemon zest "puree". If lemon zests were to be pureed to make 1/4 cup at least 10 lemons would be needed. Also, why would one allow a batter to rest that contains whipped egg whites, The whites begin to fall in a few minutes. So if they want the batter to rest to relax the glutens it should be before the whites are added. Also with all that lemon shouldn't there be some baking soda to balance the acid??? Baking Powder and high lemon acid would need some baking soda??
