Recipe: Spinach Pasta Sheets w/ Sauteed Shrimp & Roasted Tomato Cream Sauce

Ingredients:
- 2 ten inch pasta sheets cut into 2 inch strips
- 6 ea 16/20 shrimp cut in half
- ¼ cup chopped cooked smoked bacon
- ¼ cup fresh roasted Tomatoes
- 1 tsp chopped garlic
- 1 tsp chopped shallots
- 1 cup fresh Tomato sauce
- ½ cup heavy cream
- ¼ cup fresh grated Parmesan cheese
Directions:
Sauté shrimp, roasted tomatoes, bacon, garlic and shallots together. When shrimp start to change color add tomato sauce & cream. Reduce by ¼. Cook pasta two to three minutes in salted boiling water. Drain water toss pasta with sauce and cook for 30 seconds. Serve promptly.
