Thai BBQ "Atkins Ranch" Lamb Chops

NAPA VALLEY, CA - Silverado Resort is the place for great dining in Napa Valley whether you are looking for fine dining or casual fare. One of their restaurants, The Royal Oak, features the superb culinary talent of Executive Chef Peter Pahk. Below is a recipe for one of the many entrees served up by this award-winning chef.
- 2 rack of lamb (serves four)
- 1 tbsp Fermented Black Beans, soaked in warm water
- 1 tbsp Garlic, chopped
- 1 tbsp Ginger, chopped
- 1/4 cup Thai Curry Paste (red)
- 1 tsp Srirachi
- 1/2 cup Hoisin Sauce
- 1/4 cup Soy Sauce
- 1/4 cup Balsamic Vinegar
- 1 tbsp Roasted Sesame Oil
- 1/2 cup Chicken Stock
Soak Beans until soft. Combine with rest of ingredients to make sauce.
Cut racks into quarters (8 chops). Grill on medium-high heat basting at each turn with sauce (about 6-8 minutes total).
Use a medium low heat (gray ash on briquettes) so there's not too much char.
Goes great with Jasmine Rice, Chinese Long Beans and a nice Benessere Sangiovese!
